  • 4 pieces boneless, skinless chicken breasts
  • 12 spears asparagus, trimmed
  • 1 cup mozzarella cheese, shredded
  • 1 tsp garlic powder
  • 1 tsp paprika
  • q.s. salt and pepper to taste
  • 2 tbsp olive oil
  • q.s. fresh parsley, chopped for garnish

Method
 

  1. Trim the woody ends of the asparagus and pound the chicken breasts until evenly thin between two sheets of plastic wrap.
  2. Season both sides of each chicken breast with garlic powder, paprika, salt, and pepper.
  3. Spoon shredded mozzarella onto one end of each breast, followed by three asparagus spears. Roll the chicken around the filling and secure with toothpicks or kitchen twine.
  4. Heat olive oil in an oven-safe skillet over medium-high heat and sear the stuffed chicken seam-side down for about two minutes per side.
  5. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, until fully cooked through (internal temperature of 165°F).
