Ingredients
  

  • 3–4 lb Grass-fed chuck roast or brisket
  • 2 tbsp Avocado oil (or ghee)
  • 1 cup AIP-compliant beef broth
  • 2 tbsp Apple cider vinegar
  • 1 tsp Sea salt
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • Fresh sprigs (optional but recommended) Rosemary and thyme

  • Slow Cooker or Dutch Oven
  • Baking Dish if using oven

Method
 

  1. Pat the roast dry with paper towels and season with sea salt, garlic powder, and onion powder, rubbing the spices into the meat.
  2. Heat avocado oil in a large skillet over medium-high heat and sear the roast on each side for 2–3 minutes until golden brown.
  3. Transfer the seared roast to a slow cooker, Dutch oven, or baking dish. Preheat oven to 275°F if using.
  4. Pour in the beef broth and apple cider vinegar. Add fresh rosemary and thyme if desired.
  5. Cover and cook on low in a slow cooker for 8–10 hours or in the oven for 6–8 hours, checking liquid levels periodically.
  6. Once the roast is fork-tender, remove it from heat and let it rest for at least 10 minutes before slicing against the grain.
