Ingredients
  

  • 1 ripe avocado
  • 1 baguette, sliced into thin rounds
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • to taste Salt and pepper
  • for garnish leaves Fresh basil leaves

Method
 

  1. Preheat your oven to 375°F.
  2. Arrange the baguette slices on a baking sheet and brush each slice lightly with olive oil.
  3. Toast the baguette slices in the oven for about 5–7 minutes until golden brown.
  4. Cut the avocado in half and scoop out the flesh into a bowl.
  5. Mash the avocado with a fork until smooth; then mix in lemon juice, salt, and pepper.
  6. Once the baguette slices are cool enough to handle, spread the avocado mixture on each slice.
  7. Top each bite with a cherry tomato half, pressing down gently.
  8. Garnish with a tiny leaf of fresh basil.
