Ingredients
  

  • 2 slices whole-grain bread
  • 1 ripe avocado
  • 1 cup fresh spinach
  • 2 large eggs
  • 1 tablespoon lemon juice

Method
 

  1. Toast the bread until golden brown and crispy.
  2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
  3. Mash the avocado with a fork and mix in lemon juice, salt, and pepper.
  4. Spread the avocado mixture generously onto the toasted bread.
  5. Wilt the spinach in a small pan over medium heat for about 1-2 minutes.
  6. Pile the wilted spinach on top of the avocado layer.
  7. Poach the eggs in simmering water with a splash of vinegar for about 3 minutes.
  8. Place poached eggs on top of the spinach and garnish as desired.
