- In a large pot or Dutch oven, cook the diced bacon over medium heat until crisp, then remove with a slotted spoon and set aside, leaving the drippings in the pot.
- Add the chopped onion to the bacon drippings and cook until translucent, about 5 minutes; stir in the minced garlic and sauté for another minute until fragrant.
- Pour in the chicken broth and add the diced potatoes; bring to a boil and then lower to a gentle simmer for about 10 minutes, or until potatoes start to tender.
- Stir in the shredded cabbage, sliced carrots, bay leaf, dried thyme, and black pepper; let simmer for 15-20 minutes until the vegetables are tender.
- (Optional) For a creamy texture, stir in the heavy cream and heat gently without boiling.
- Taste and adjust the seasoning with salt and pepper; remove the bay leaf and garnish with reserved bacon and chopped parsley.
- Ladle the soup into bowls and serve warm.
