- Pour the warm water into a mixing bowl and sprinkle the yeast over the top. Add the sugar and let it sit for about 5 minutes until it gets frothy.
- Add the flour, salt, and olive oil to the yeast mixture. Stir until a shaggy dough forms, then knead it on a floured surface for about 8-10 minutes.
- Place the dough in a lightly oiled bowl, cover with a damp towel, and let it rise for 1-2 hours until it doubles in size.
- Punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, then poke a hole through the center and stretch it slightly.
- Bring a pot of water to a boil and add the honey. Drop each bagel into the water for 30 seconds per side.
- Transfer the boiled bagels to a baking sheet, brush with egg white, sprinkle with toppings, and bake at 425°F for 20-25 minutes until golden brown.
