Ingredients
  

  • 250 g unsalted butter softened
  • 100 g powdered sugar also called icing or confectioners' sugar
  • 1 large egg at room temperature
  • 400 g all-purpose flour
  • 2 fresh lemons zest of
  • pinch fine sea salt generous

  • Hand mixer or stand mixer
  • Measuring cups and spoons or kitchen scale
  • Plastic wrap
  • Rolling pin

Method
 

  1. In a large mixing bowl, cream together the butter and powdered sugar until pale and fluffy.
  2. Add the egg and lemon zest, mixing until fully combined.
  3. Gradually add the all-purpose flour and salt, mixing until a soft dough forms.
  4. Shape the dough into a flat disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  5. Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
  6. Roll the chilled dough to about 1/4-inch thickness and cut out shapes with cookie cutters.
  7. Place the cut shapes on the prepared baking sheets, leaving space in between.
  8. Bake for 10 to 12 minutes, or until the edges are lightly golden.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before dusting with powdered sugar.
