Ingredients
  

  • 225 g feta cheese
  • 1 cup pitted olives kalamata or green
  • 1 cup cherry tomatoes halved
  • 1/4 cup sun-dried tomatoes thinly sliced
  • 1 clove garlic minced or grated
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • to taste salt and pepper
  • 1/4 cup olive oil

Method
 

  1. Preheat your oven to 200°C (400°F) and prepare a baking dish.
  2. Place the block of feta in the center of the dish.
  3. In a mixing bowl, combine olives, tomatoes, sun-dried tomatoes, garlic, oregano, thyme, salt, and pepper; toss to coat.
  4. Pour the mixture around the feta in the baking dish.
  5. Drizzle olive oil over the entire dish and bake for 20 minutes.
  6. Switch oven to broil and cook for an additional 2-3 minutes to achieve a golden finish.
