Ingredients
  

  • 2 large eggs or 3 egg whites
  • 2 slices smoked turkey breast diced
  • 1/4 cup low-fat cottage cheese
  • 1 teaspoon olive oil or cooking spray
  • q.s. salt and pepper to taste
  • q.s. fresh herbs optional, for garnish

Method
 

  1. Heat a non-stick skillet over medium heat and add olive oil or cooking spray.
  2. Crack the eggs into a small bowl, season with salt and pepper, and whisk until fully combined.
  3. Pour the whisked eggs into the warmed skillet and let sit for about 30 seconds until edges begin to set.
  4. Gently push the eggs from the edges toward the center, and add the diced smoked turkey.
  5. Stir gently until the eggs are just set but still moist.
  6. Remove the skillet from the heat, add the cottage cheese, and fold it into the scrambled eggs gently.
  7. Transfer the scramble to a plate and garnish with fresh herbs, if desired.
