  • 1.5 pounds Ground beef (80/20 blend)
  • 1 cup Breadcrumbs
  • 1 small Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 large Eggs
  • 0.5 cup Milk
  • 0.75 cup Barbecue sauce like Sweet Baby Ray’s
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Shredded cheddar cheese optional for BBQ meatloaf with cheese

Method
 

  1. Preheat your oven to 375°F.
  2. In a mixing bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, half the barbecue sauce, salt, and pepper; mix with hands until just combined.
  3. Transfer the mixture onto a parchment paper-lined baking sheet and shape into a 9x5 inch loaf. Optionally, press a layer of shredded cheddar cheese into the center before sealing.
  4. Brush the remaining barbecue sauce over the top of the meatloaf.
  5. Bake in the oven for 45-50 minutes. Then broil for an additional 2-3 minutes to caramelize the glaze.
  6. Let the meatloaf rest for 10 minutes before slicing to retain juices.
