- In a large bowl, combine ground beef, breadcrumbs, eggs, chopped onions, minced garlic, and half a cup of BBQ sauce.
- Mix gently with your hands until just combined; avoid overmixing.
- For a cheesy center, flatten half the mixture on a baking sheet, sprinkle cheese, and cover with the remaining mixture, sealing edges.
- Shape the formed loaf and place it on a baking tray or foil-lined grill.
- Prepare your BBQ glaze by mixing BBQ sauce, honey or brown sugar, apple cider vinegar, and smoked paprika and simmering until thickened.
- Slather the glaze over the meatloaf during the last 15 minutes of cooking.
- Cook in oven at 350°F (175°C) for about 1 hour or in a smoker at 275°F (135°C) until internal temperature reaches 160°F (71°C).
- Let meatloaf rest for at least 10 minutes before slicing.
