  • 100 g Breadcrumbs fresh or panko
  • 2 Eggs
  • 1 large Onion finely chopped
  • 2 cloves Garlic minced
  • 0.5 cup BBQ Sauce your choice (e.g., Sweet Baby Rays, Hunts)
  • 100 g Cheese optional; cheddar or mozzarella for stuffing

Method
 

  1. In a large bowl, combine ground beef, breadcrumbs, eggs, chopped onions, minced garlic, and half a cup of BBQ sauce.
  2. Mix gently with your hands until just combined; avoid overmixing.
  3. For a cheesy center, flatten half the mixture on a baking sheet, sprinkle cheese, and cover with the remaining mixture, sealing edges.
  4. Shape the formed loaf and place it on a baking tray or foil-lined grill.
  5. Prepare your BBQ glaze by mixing BBQ sauce, honey or brown sugar, apple cider vinegar, and smoked paprika and simmering until thickened.
  6. Slather the glaze over the meatloaf during the last 15 minutes of cooking.
  7. Cook in oven at 350°F (175°C) for about 1 hour or in a smoker at 275°F (135°C) until internal temperature reaches 160°F (71°C).
  8. Let meatloaf rest for at least 10 minutes before slicing.
