Beef Carbonnade Fries

Ingredients
  

  • 1000 g beef (gîte, paleron, or macreuse) cut into chunks
  • 3 onions thinly sliced
  • 2 tablespoons Dijon mustard
  • 50 g butter
  • 30 g brown sugar
  • 300 ml beef broth
  • 200 ml non-alcoholic barley malt to replace dark beer
  • 2 slices gingerbread for added flavor
  • 2 leaves bay leaves
  • 3 sprigs thyme
  • 1 tablespoon apple cider vinegar to replace wine vinegar
  • to taste salt and pepper
  • Fries for serving, homemade or store-bought

Equipment

  • Large pot or Dutch oven
  • Wooden spoon or spatula
  • Sharp knife for slicing onions
  • Baking sheet (if making homemade fries)
  • Mixing bowl

Method
 

  1. Heat butter and oil in a large pot over medium heat. Add beef chunks and brown on all sides. Remove and set aside.
  2. In the same pot, add sliced onions and stir until soft and translucent. Sprinkle brown sugar to caramelize slightly.
  3. Return beef to the pot and stir in mustard, apple cider vinegar, beef broth, and barley malt. Add bay leaves and thyme. Spread mustard on gingerbread and add on top of the stew. Cover and simmer.
  4. Simmer on low heat for 2.5 to 3 hours until the sauce thickens and beef is tender. Prepare fries as desired.
  5. Adjust seasoning with salt and pepper before serving hot with crispy fries.

Notes

For an upgraded flavor, toast the gingerbread before adding it to the stew. Leftovers can be stored in an airtight container for up to 3 days. The flavors become richer the next day! Fries should be stored separately to stay crispy. If desired, replace fries with roasted zucchini sticks for a healthier option!
