Ingredients
  

  • 1000 g beef stew meat or chuck steak cut into 2-inch chunks
  • 4 units onions finely sliced
  • 1 tbsp butter
  • 1 tbsp oil for searing
  • 1 tbsp vinegar
  • 1 tbsp brown sugar
  • 1 tbsp toasted flour (or all-purpose flour)
  • 1 tbsp capers
  • 4 tbsp mixed fresh herbs (parsley, chives, tarragon, chervil)
  • 400 ml dark Belgian beer (like Chimay Grande Réserve)
  • 1 leaf bay leaf
  • a few sprigs units fresh thyme
  • to taste salt and pepper
  • a little extra water if needed

Method
 

  1. Preheat your oven to 300°F (150°C).
  2. Pat beef cubes dry with paper towels and season generously with salt.
  3. Slice onions thinly and chop fresh herbs.
  4. Heat oil in a heavy oven-proof pot over high heat and sear the beef in a single layer until browned.
  5. Remove beef and set aside. Add butter to the pot and lower the heat to medium-low.
  6. Add onions and caramelize for about 15 minutes, stirring occasionally.
  7. Return seared beef to the pot with onions and sprinkle toasted flour, stirring for a minute.
  8. Layer the beef, onions, and chopped herbs in the pot.
  9. Add vinegar, brown sugar, thyme, bay leaf, salt, and pepper, followed by dark beer and enough water to cover.
  10. Cover pot and braise in the oven for 3 hours.
  11. Remove from oven, discard thyme and bay leaf, stir, and serve topped with fresh herbs and capers.
