Ingredients

  • 3 eggs
  • 80 g sugar
  • 1 sachet vanilla sugar
  • 200 g ladyfingers
  • 3 tablespoons cocoa powder
  • 4 tablespoons cherry jam (or fresh cherries)

Method
 

  1. Separate the eggs, whisk yolks with sugar and vanilla sugar until pale and fluffy, then fold in mascarpone.
  2. Beat egg whites in a separate bowl until stiff peaks form, then gently fold into the mascarpone mixture.
  3. Dip each ladyfinger into cocoa powder briefly to coat and arrange in a square dish.
  4. Spread half of the mascarpone mixture over the ladyfingers, add dollops of cherry jam, then repeat layers.
  5. Finish with a dusting of cocoa powder and refrigerate for at least 4 hours (overnight for best results).
