- Preheat your oven to 350°F (175°C).
- Mash the ripe bananas in a large bowl until smooth.
- Mix in the melted butter and stir until combined.
- Add the sugar, eggs, and vanilla extract to the banana mixture; stir well.
- In a separate bowl, combine the baking soda, salt, and flour.
- Gradually add the dry ingredients to the wet mixture, folding gently until just combined; don’t overmix.
- If desired, fold in yogurt or sour cream for added moisture.
- Pour the batter into a greased loaf pan and smooth the top.
- Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes
