  • 8 large flour tortillas

Method
 

  1. Cook hash browns according to package instructions until crispy.
  2. Dice onions and bell peppers.
  3. If using sausage or bacon, ensure it's fully cooked and crumbled.
  4. In a large bowl, whisk together the eggs with a pinch of salt and pepper.
  5. Heat a nonstick skillet over medium heat and pour in the eggs, stirring gently until softly set but still moist.
  6. Lay out tortillas on a clean surface.

  8. Roll up the tortillas tightly, folding in the sides to secure the filling.
