Ingredients

  • 12 large eggs
  • 1 loaf stale crusty bread (artisan loaf or baguette)
  • 2 cups whole milk (or almond/oat milk)
  • 2 cups Gruyère cheese (grated; Swiss or sharp cheddar can be used as alternatives)
  • to taste salt
  • to taste pepper
  • optional fresh herbs (such as thyme or parsley)

Equipment

  • Mixing bowls
  • Whisk
  • Spatula
  • Baking dish
  • Oven

Method

  1. Cut the stale bread into 1-inch cubes and place them in a bowl without overcrowding.
  2. Grate the cheese finely and sprinkle half over the bread cubes.
  3. Layer any additional fillings like sautéed spinach, caramelized onions, or cooked sausage on top.
  4. In a separate bowl, whisk together the eggs, milk, salt, and pepper.
  5. Pour the egg mixture evenly over the bread and cheese, pressing down with a spatula to coat all cubes.
  6. Cover the dish and refrigerate overnight to allow the bread to soak.
  7. Preheat the oven to 350°F (175°C) the next morning.
  8. Bake the strata for 45 minutes to an hour until golden brown and puffed, covering with foil for the first half to avoid over-browning.
