- Soften the vanilla ice cream by letting it sit at room temperature for about 10 minutes.
- In a small saucepan, combine chocolate chips and heavy cream over low heat, stirring until smooth and glossy.
- Stir in the vanilla extract and allow the fudge mixture to cool for a few minutes.
- Spread half of the softened ice cream into a loaf pan, drizzle half of the fudge over it, and sprinkle half of the chopped peanut butter cups.
- Repeat the layering with the remaining ice cream, fudge, and peanut butter cups, swirling gently to combine.
- Cover with plastic wrap and freeze for at least 4 hours or overnight until firm.
- For easier serving, use a warm ice cream scoop.
- Store your bunny tracks ice cream in an airtight container in the freezer for up to two weeks, labeling it with the date for freshness.
