Ingredients
  

  • 200 g softened butter
  • 120 g sugar
  • 280 g all-purpose flour
  • 1 teaspoon vanilla essence

Equipment

  • Large mixing bowl
  • Hand mixer or wooden spoon
  • Fine-mesh sieve or sifter
  • Plastic wrap
  • Baking tray

Method
 

  1. In a large mixing bowl, cream together the softened butter and sugar until pale and fluffy.
  2. Add the vanilla essence and mix thoroughly until combined.
  3. Sift the flour into the bowl and gently mix until a soft dough forms.
  4. Shape the dough into a log about 2 inches in diameter and wrap it tightly in plastic wrap.
  5. Chill the dough log in the refrigerator for at least 1 hour.
  6. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  7. Unwrap the chilled log and slice it into rounds about 1 cm thick.
  8. Place the slices on the prepared baking tray, leaving space between them.
  9. Bake for about 11-12 minutes, until the edges are just turning golden brown.
  10. Allow the cookies to cool on the tray for 5-10 minutes before transferring them to a cooling rack.

Notes

For the most flavorful cookies, make the dough a day ahead and chill overnight. Store cooled cookies in an airtight container at room temperature for up to a week.
