- Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium-high heat, add the ground beef and cook until browned, roughly 7-8 minutes. Season with Cajun seasoning, paprika, and salt and pepper. Stir in Italian seasoning if using.
- Push the cooked beef to the side of the skillet. Add the butter and minced garlic to the open space and sauté for 1-2 minutes until fragrant. Mix everything together.
- Lower the heat to medium. Pour in the heavy cream and milk, stir to deglaze the skillet. Add Velveeta cheese and stir until melted. Mix in shredded cheddar until the sauce thickens.
- Add the cooked rotini to the skillet and toss until fully coated. Adjust seasoning if necessary. Let it simmer for 2-3 minutes.
- Garnish with parsley or green onions and serve hot.

Notes
For a lighter option, substitute ground beef with ground turkey or chicken. You can also use cream cheese or a mix of American and cheddar cheeses in place of Velveeta cheese.
