Ingredients
  

  • 1 pound beef sirloin cut into 1-inch cubes
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 4 cloves garlic minced
  • 1 pound rotini pasta
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 3 cups whole milk
  • 8 oz cream cheese softened
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • q.s. chopped fresh chives for garnish

Method
 

  1. Season the beef cubes with olive oil, Cajun seasoning, and smoked paprika, then let sit for 5-10 minutes.
  2. Sear the seasoned beef in a hot skillet until golden brown on all sides, then set aside.
  3. In the same skillet, cook minced garlic until fragrant and golden, about 30 seconds.
  4. Cook rotini pasta according to package directions in salted boiling water until al dente, then drain.
  5. In a separate saucepan, melt butter and whisk in flour, cooking for 1-2 minutes to form a roux.
  6. Gradually add milk to the roux while whisking continuously until thickened, then reduce heat.
  7. Stir in softened cream cheese and shredded cheeses until fully melted and smooth.
  8. Combine the drained rotini and seared beef with the cheese sauce, mixing until well coated.
  9. Serve immediately, garnished with chopped chives if desired.

Notes

Feel free to substitute beef with chicken or shrimp for a variation. Use any short pasta you have on hand if you don’t have rotini.
