- Bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente, about 8-10 minutes. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Toss chicken strips with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Cook chicken for 5-6 minutes per side until golden and cooked through. Remove from skillet and set aside.
- In the same skillet, melt butter. Add minced garlic and sauté for about 1 minute. Pour in chicken broth and heavy cream, bring to a low simmer. Stir in grated Parmesan and shredded mozzarella until melted and smooth.
- Add cooked fettuccine and seared chicken back into the skillet, tossing to coat everything in the sauce. Let simmer for 2-3 minutes to meld flavors.
- Garnish with fresh parsley and serve hot.
