Ingredients
  

  • 2 breasts boneless, skinless chicken sliced into strips
  • 12 oz fettuccine pasta
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • q.s. Salt and pepper to taste
  • 4 cloves garlic minced
  • 1 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • q.s. Fresh parsley chopped for garnish

  • Large skillet
  • Tongs or spatula for tossing

Method
 

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Toss chicken strips with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Cook chicken for 5-6 minutes per side until golden and cooked through. Remove from skillet and set aside.
  3. In the same skillet, melt butter. Add minced garlic and sauté for about 1 minute. Pour in chicken broth and heavy cream, bring to a low simmer. Stir in grated Parmesan and shredded mozzarella until melted and smooth.
  4. Add cooked fettuccine and seared chicken back into the skillet, tossing to coat everything in the sauce. Let simmer for 2-3 minutes to meld flavors.
  5. Garnish with fresh parsley and serve hot.
