Ingredients
  

  • 2 breasts boneless, skinless chicken cut into strips
  • 12 oz bowtie pasta
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper optional for extra heat
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • to taste Salt and pepper
  • 1/4 cup fresh parsley chopped for garnish

Method
 

  1. In a large skillet, heat olive oil over medium heat, add chicken strips seasoned with Cajun seasoning, and cook until golden brown and cooked through, about 5-7 minutes, then remove and set aside.
  2. Cook the bowtie pasta according to package directions in salted water until al dente, then drain and reserve about 1 cup of pasta water.
  3. In the same skillet, sauté minced garlic in olive oil for about 1 minute, then pour in chicken broth and simmer for 2-3 minutes.
  4. Add heavy cream and bring to a gentle simmer to thicken the sauce.
  5. Stir in Parmesan and mozzarella cheese until melted and season with salt and pepper.
  6. Add cooked pasta and Cajun chicken back to the skillet, tossing to coat in the sauce, adjusting the consistency with reserved pasta water as needed.
  7. Garnish with parsley and extra Parmesan, serve immediately.

Notes
