Ingredients
  

  • 1 tsp smoked paprika
  • 0.5 tsp chili powder
  • 0.5 tsp ground cumin
  • 1 tsp Italian herb blend
  • 0.5 tsp garlic powder
  • 0.5 tsp cayenne pepper adjust to taste
  • 0.5 tsp salt
  • 600–700 g boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 4 cloves garlic, thinly sliced
  • 3 tbsp fresh lemon juice
  • 3 tbsp butter
  • 2 tbsp chicken broth
  • 2 tbsp fresh parsley, chopped

Equipment

  • Large skillet
  • Wooden spoon or spatula
  • Small mixing bowl
  • Sharp knife
  • Optional: Zester or grater

Method
 

  1. Start by mixing all your spices for the Cajun seasoning in a small bowl.
  2. Pat the chicken dry with paper towels and generously sprinkle the Cajun mix on both sides.
  3. Heat olive oil in a large skillet over medium heat, then add the seasoned chicken and sear undisturbed for 5 minutes.
  4. Flip the chicken and cook for another 5 minutes until juicy and cooked through, then remove and set aside.
  5. In the same skillet, add the sliced garlic and let it sizzle for a minute before adding chicken broth and lemon juice.
  6. Scrape up any brown bits, add butter, and stir until melted into a creamy sauce.
  7. Nestle the chicken back into the skillet and spoon the sauce generously over it, then sprinkle with fresh parsley and let it rest for a minute off the heat.

Notes

For an extra layer of flavor, zest the lemon before juicing and add the zest to the sauce.
