Ingredients

  • ½ tsp ground cumin
  • 1 tsp Italian herb blend
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper adjust to taste
  • ½ tsp salt
  • 2 tbsp olive oil
  • 3 tbsp fresh lemon juice
  • 3 tbsp butter
  • 2 tbsp chicken broth
  • 2 tbsp fresh parsley, chopped

Method
 

  1. Mix the Cajun seasoning ingredients in a small bowl.
  2. Pat the chicken thighs dry and season both sides with the Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a large skillet over medium heat and sear the chicken thighs for about 5 minutes on each side until golden brown and cooked through.
  4. Remove the chicken and add sliced garlic to the same skillet, cooking until fragrant.
  5. Deglaze the pan with chicken broth, then add lemon juice and let simmer before stirring in the butter.
  6. Return the chicken to the skillet, spoon the sauce over it, and garnish with fresh parsley.
