Ingredients
  

  • 165 g all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 3/4 tsp kosher salt Diamond Crystal is best
  • 110 g unsalted butter melted and cooled
  • 100 g light brown sugar packed
  • 75 g granulated sugar
  • 2 tsp vanilla extract
  • 1 large egg
  • 240 g semisweet chocolate chips
  • flaky sea salt for finishing

Method
 

  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and kosher salt until well combined.
  3. In a large mixing bowl, combine melted butter, brown sugar, and granulated sugar; whisk vigorously for 1-2 minutes until smooth and glossy.
  4. Add the egg and vanilla extract to the sugar mixture; whisk until fully combined.
  5. Gently fold the dry ingredients into the wet mixture until just combined, ensuring some flour streaks remain.
  6. Incorporate the chocolate chips, folding carefully until evenly distributed; do not overmix.
  7. Use a large cookie scoop to portion the dough onto the prepared baking sheet; leave space between scoops.
  8. Bake cookies for 12-15 minutes, until edges are golden brown but centers are still soft.
  9. Once out of the oven, press a few extra chocolate chips into the tops and sprinkle with flaky sea salt.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
