- In a large deep skillet or Dutch oven, heat the olive oil over medium-high heat. Toss the chicken pieces with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper, then sear the chicken until browned and fully cooked, about 5-7 minutes. Remove and set aside.
- In the same pan, melt the butter and add the minced garlic. Cook for 1 minute until fragrant.
- Pour in the chicken broth and heavy cream. Stir in the uncooked linguine, making sure it’s submerged, and bring to a low boil. Reduce heat and simmer uncovered for 10-12 minutes, stirring occasionally, until the pasta is al dente and the liquid has absorbed.
- Lower the heat to medium-low. Add cream cheese cubes, Parmesan, and mozzarella. Stir until melted into a rich sauce.
- Add the cooked Cajun chicken back to the pan, toss to coat in the sauce, and let simmer for 2 more minutes. Top with chopped parsley and more Parmesan if desired.
