  • 12 oz rotini pasta
  • 1 cup shredded cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup Parmesan cheese, grated

Method
 

  1. Bring a large pot of salted water to a boil and cook rotini pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken and season with Cajun seasoning. Cook for about 5-7 minutes until golden brown and cooked through.
  3. Reduce heat to medium, add heavy cream to the skillet, and let it simmer for a few minutes. Stir in cheddar, mozzarella, and Parmesan cheeses until melted and smooth.
  4. Add the cooked pasta and chicken back into the skillet, stirring until well-coated with the sauce. Serve in dishes and garnish with fresh herbs.
