Ingredients
  

  • 8 oz fettuccine or penne pasta
  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic
  • Salt and pepper to taste
  • Fresh parsley

Method
 

  1. Boil water in a large pot, add salt, and cook pasta until al dente; drain and set aside.
  2. Coat chicken strips with Cajun seasoning, then heat olive oil in a skillet and sear the chicken until golden brown and cooked through.
  3. Lower heat, add minced garlic to the skillet and stir for about 30 seconds. Pour in chicken broth and heavy cream; simmer until slightly thickened.
  4. Stir in Parmesan cheese until melted and smooth; add cooked pasta and chicken to the skillet, mixing until coated. Season with salt and pepper, and garnish with parsley before serving.
