Ingredients
  

  • 1.25 lbs boneless, skinless chicken breasts, sliced into strips
  • 12 oz rotini pasta
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 oz cream cheese for extra creaminess
  • q.s. Cajun seasoning to taste
  • q.s. Olive oil
  • q.s. Salt and pepper to taste

Method
 

  1. Season chicken strips with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and cook chicken until golden brown, about 5-7 minutes. Set aside.
  3. Boil salted water in a large pot and cook rotini pasta until al dente; drain and set aside.
  4. In the same skillet, combine chicken broth and heavy cream; simmer and reduce for a few minutes.
  5. Stir in mozzarella, Parmesan, and cream cheese, whisk until melted and smooth; return chicken to skillet and mix well.
  6. Add cooked rotini to skillet, toss until well coated with sauce, and serve hot.
