- Season chicken strips with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat and cook chicken until golden brown, about 5-7 minutes. Set aside.
- Boil salted water in a large pot and cook rotini pasta until al dente; drain and set aside.
- In the same skillet, combine chicken broth and heavy cream; simmer and reduce for a few minutes.
- Stir in mozzarella, Parmesan, and cream cheese, whisk until melted and smooth; return chicken to skillet and mix well.
- Add cooked rotini to skillet, toss until well coated with sauce, and serve hot.
