Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 4 tbsp butter, divided
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1 cup chicken broth
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 20 oz package of cheese tortellini
  • 1/2 tsp smoked paprika

Method
 

  1. Toss chicken pieces with olive oil and Cajun seasoning until coated.
  2. Heat skillet over medium-high and melt 2 tbsp of butter; add chicken and cook until golden brown, about 6-8 minutes.
  3. Set chicken aside; melt remaining butter in the skillet and add minced garlic for 30 seconds.
  4. Whisk in flour to create a roux, cooking for a minute before gradually adding milk and chicken broth.
  5. Lower the heat and add cream cheese, mozzarella, and cheddar, stirring until melted.
  6. Stir in smoked paprika, salt, and pepper.
  7. Add cooked chicken and tortellini; gently stir and simmer for 5-7 minutes until tortellini is tender.
