- Boil a large pot of salted water and cook the bowtie pasta for 10-11 minutes. Drain, reserving 1/2 cup of pasta water, and set aside.
- Pat the steak tips dry, then toss with Cajun seasoning, garlic powder, smoked paprika, salt, and black pepper.
- Heat a large skillet over medium-high heat, add olive oil and 1 tbsp butter, then sear the steak tips for 1-2 minutes on each side. Transfer to a plate and cover.
- Lower the heat to medium, melt the remaining 2 tbsp of butter in the same skillet, and add the minced garlic. Sauté until fragrant, about 30-45 seconds.
- Pour in the heavy cream and milk, then whisk in the softened cream cheese until melted and smooth.
- Stir in the grated Parmesan, shredded mozzarella, and Cajun seasoning until the cheeses melt and the sauce is smooth. Adjust with salt and pepper and add reserved pasta water if needed.
- Toss the cooked bowtie pasta in the skillet with the sauce until well coated.
- Top with the seared Cajun steak tips and garnish with fresh parsley. Serve immediately.
