Ingredients
  

  • 1 cup Graham cracker crumbs
  • 2 tbsp Granulated sugar
  • 1/2 cup Melted unsalted butter
  • 8 oz Softened cream cheese
  • 3/4 cup Powdered sugar
  • 1 tsp Peppermint extract
  • 1 tsp Green food coloring optional
  • 1 cup Chocolate chips
  • 1/2 cup Heavy cream
  • q.s. Melted chocolate for drizzling to taste
  • q.s. Crushed candy canes for decoration

Equipment

  • 9x9-inch baking dish
  • Parchment paper
  • Mixing bowls
  • Hand mixer or stand mixer
  • Microwave-safe bowl

Method
 

  1. Line a 9x9-inch baking dish with parchment paper, leaving overhang for easy removal.
  2. In a bowl, mix graham cracker crumbs and sugar, then stir in melted butter until combined.
  3. Press the crumb mixture into the lined baking dish and chill in the fridge.
  4. Beat the softened cream cheese in a mixer until smooth, then add powdered sugar, peppermint extract, and optional food coloring and blend well.
  5. Melt chocolate chips and heavy cream together in the microwave, stirring until smooth, then let cool slightly.
  6. Pour the melted chocolate into the cream cheese mixture and fold gently until combined.
  7. Spread the filling over the chilled crust and refrigerate until firm, about 4 hours or overnight.
  8. Once set, slice into 16 squares and drizzle with melted chocolate and sprinkle with crushed candy canes.
