  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/2 cup fresh lemon juice about 2-3 large lemons
  • 1 tablespoon lemon zest
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder

Method
 

  1. Preheat your oven to 350°F (175°C) and prepare a 13x9-inch baking pan (no greasing needed).
  2. In a medium bowl, combine 2 cups flour and 1/2 cup powdered sugar and whisk together.
  3. Add softened butter to the dry mixture and blend until crumbly.
  4. Press the crumbly mixture into the bottom of the ungreased pan.
  5. Bake the crust for 20 minutes until light golden brown.
  6. In a large bowl, beat together the eggs and granulated sugar until smooth and pale.
  7. Whisk in fresh lemon juice and lemon zest.
  8. In a separate bowl, mix 1/4 cup flour and baking powder, then whisk into the lemon mixture until smooth.
  9. Pour the lemon filling over the hot crust and spread it evenly.
  10. Return the pan to the oven and bake for an additional 20-25 minutes until the edges are lightly browned.
  11. Allow to cool completely on a wire rack before dusting with powdered sugar and cutting into squares.
