- Bring a large pot of salted water to a boil and cook the bowtie pasta until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet, melt 3 tablespoons of butter with olive oil over medium-high heat. Add the chicken, season with Cajun seasoning, garlic powder, onion powder, Italian seasoning, black pepper, and salt. Cook for 7-8 minutes until golden and fully cooked. Remove and set aside.
- Lower the heat to medium in the same skillet, melt the remaining butter, add minced garlic, and cook for 30 seconds until fragrant. Pour in chicken broth and heavy cream; stir to combine. Add Velveeta and cream cheese, stirring until melted and smooth.
- Add the cooked chicken and pasta back into the skillet, stirring until coated in the sauce. Mix in mozzarella and Parmesan until melted. Adjust salt if necessary and let it sit for a minute on low heat. Garnish with parsley before serving.
