- Bring a large pot of salted water to a boil and cook the linguine until tender, following package instructions.
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Season chicken with Cajun seasoning, salt, and pepper, then cook until golden (about 7-8 minutes). Transfer chicken to a plate and keep warm.
- In the same skillet, reduce heat and melt the remaining butter. Add minced garlic and cook until fragrant (about 30 seconds). Pour in chicken broth and heavy cream, scraping the bottom to release browned bits, then simmer.
- Stir in Velveeta and cream cheese until melted. Gradually add mozzarella and Parmesan, stirring until thick and creamy. Adjust seasoning as needed.
- Combine cooked linguine with the sauce in the skillet, tossing to coat. If the sauce is too thick, add a splash of reserved pasta water. Top with chicken, garnish with parsley and Parmesan before serving.
