Ingredients
  

  • 12 oz rotini pasta
  • 1.5 lb boneless skinless chicken breasts, cut into bite-size pieces
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • to taste Salt and freshly ground black pepper
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup low-sodium chicken broth
  • 2 cups heavy cream
  • 4 oz cream cheese, cubed
  • 1 cup cubed Velveeta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped green onions or parsley for garnish (optional)

Method
 

  1. Bring a large pot of salted water to a boil and cook the rotini pasta according to the package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil and 1 tablespoon butter over medium-high heat, add seasoned chicken, and cook until browned and cooked through, about 5-6 minutes. Remove and set aside.
  3. Reduce heat to medium, add remaining butter to the skillet, sauté diced onion until soft, then add minced garlic and cook for another 30 seconds.
  4. Sprinkle flour over the mixture, stir for 1 minute, then gradually whisk in chicken broth and heavy cream until it thickens. Add cream cheese and Velveeta, stirring to melt completely, then mix in Parmesan cheese until smooth.
  5. Return chicken to the skillet alongside cooked rotini, toss to coat in the sauce, adjust seasoning if needed, and garnish before serving.
