Ingredients
  

  • 12 oz tortellini pasta (cheese-filled)
  • 1 lb ground beef
  • 1 jar (24 oz) marinara sauce
  • 8 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes (optional) for a kick
  • q.s. salt and black pepper to taste
  • 1 tbsp olive oil
  • q.s. chopped parsley or basil for garnish

Equipment

  • Large pot for boiling pasta
  • Large skillet or Dutch oven
  • Colander for draining
  • Wooden spoon or silicone spatula for stirring
  • Measuring cup and spoons

Method
 

  1. Bring a large pot of salted water to a boil and cook the tortellini according to package instructions. Drain well and set aside.
  2. In a large skillet, heat olive oil over medium heat and brown the ground beef, breaking it into small crumbles.
  3. Drain excess grease from the beef and sprinkle with garlic powder, onion powder, Italian seasoning, crushed red pepper flakes, salt, and black pepper. Stir to combine and cook until fragrant.
  4. Add marinara sauce to the beef and let it simmer on low heat for 5-7 minutes.
  5. Stir in the cubed Velveeta cheese and mix until melted and smooth.
  6. Gently fold the cooked tortellini into the cheesy beef marinara sauce until well coated.
  7. Sprinkle shredded mozzarella cheese on top, cover, and let it sit for 2-3 minutes off the heat to melt.
  8. Garnish with chopped parsley or basil before serving.

Notes

This dish is incredibly versatile; feel free to swap the ground beef for turkey or a plant-based alternative. You can also use different types of stuffed pasta. For a lighter version, consider using lean ground beef and a reduced-fat cheese.
