Ingredients
  

  • 1 lb boneless, skinless chicken breasts, cut into thick chunks
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • to taste Salt and black pepper
  • 20 oz cheese tortellini refrigerated or frozen
  • 2 tbsp minced garlic
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1 cup Velveeta, cubed
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp red pepper flakes optional
  • 1/2 cup reserved pasta water as needed
  • 1 tbsp fresh parsley, chopped for garnish

  • Pot for boiling tortellini
  • Colander for draining pasta
  • Sharp knife and cutting board

Method
 

  1. Cook the tortellini according to package directions, saving ½ cup of pasta water, and set aside.
  2. Heat butter and olive oil in a large skillet over medium-high heat.
  3. Season chicken with Cajun seasoning, garlic powder, salt, and black pepper; cook in the skillet for 6-8 minutes until golden and cooked through.
  4. Add minced garlic to the skillet and cook until fragrant, about 30 seconds.
  5. Stir in heavy cream, Parmesan, Velveeta, smoked paprika, onion powder, and red pepper flakes; stir until cheese is melted and creamy.
  6. Combine cooked tortellini with the sauce, adding reserved pasta water as needed for consistency.
  7. Return chicken to skillet and heat through, adjusting seasoning to taste.
  8. Serve hot, garnished with parsley and extra Parmesan, if desired.
