Cajun Salmon Shrimp

Ingredients
  

  • 2 fillets salmon (6 oz each), skin-on or skinless
  • 1/2 lb large shrimp, peeled and deveined
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup diced onion
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 cup heavy cream substitute with coconut cream for dairy-free
  • 1 medium lemon, juiced
  • q.s. salt and black pepper to taste
  • q.s. fresh parsley, for garnish

Equipment

  • Large skillet (cast iron or stainless steel)
  • Spatula or fish turner
  • Sharp knife and cutting board
  • Measuring spoons and cups
  • Juicer for lemon

Method
 

  1. Pat salmon fillets and shrimp dry; rub with Cajun seasoning.
  2. Heat olive oil in a skillet; sear salmon fillets for 3-4 minutes on each side until golden brown and cooked through.
  3. Remove salmon; add shrimp to the same pan and cook for about 2 minutes per side until pink and opaque.
  4. Lower the heat, melt butter, and sauté onion, garlic, thyme, and oregano for 2-3 minutes until fragrant.
  5. Pour in heavy cream, scrape up browned bits, and simmer for 4-5 minutes until thickened. Season with salt, pepper, and lemon juice.
  6. Return salmon and shrimp to the skillet; simmer for 2 minutes.
  7. Plate and drizzle with sauce; garnish with parsley.
