Cajun Seafood Alfredo

Ingredients
  

  • 1 tail lobster, cooked and chopped
  • 1/2 lb crab meat, picked over for shells
  • 2 fillets salmon, cooked and flaked
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1.5 cups heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 1 tbsp Cajun seasoning or to taste
  • 1 tbsp fresh parsley, chopped
  • 12 oz fettuccine or pasta of choice
  • to taste salt and pepper
  • 1/2 lemon juice of optional

Method
 

  1. In a large pot of salted boiling water, cook the fettuccine according to the package directions until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil and butter over medium heat and add the minced garlic. Sauté until fragrant, about 1 minute.
  3. Pour in the heavy cream and stir in the Cajun seasoning. Bring to a gentle simmer and cook for 2-3 minutes until the sauce thickens slightly.
  4. Stir in the Parmesan cheese, cooked lobster, crab meat, and flaked salmon, heating for another 2-3 minutes until everything is warmed through.
  5. Toss the cooked pasta in the creamy seafood sauce until well-coated. Season with salt, pepper, and lemon juice if using.
  6. Garnish with fresh parsley and extra Parmesan cheese. Serve hot and enjoy!
