  • 1 lb steak strips (sirloin or ribeye)
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter divided
  • 4 cloves garlic, minced
  • 2 tsp Cajun seasoning adjust to taste
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • q.s. Salt and black pepper to taste
  • 12 oz fettuccine pasta
  • 1.5 cups heavy cream
  • 0.5 cup low-sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 0.5 cup cream cheese, softened
  • 0.5 cup shredded mozzarella
  • 0.5 tsp red pepper flakes optional
  • 2 tbsp chopped fresh parsley for garnish

Equipment

  • Large pot for boiling pasta
  • Large skillet
  • Tongs
  • Wooden spoon or spatula
  • Mug or small bowl for pasta water

Method
 

  1. Bring a large pot of salted water to a boil and cook the fettuccine until al dente, reserving some pasta water before draining.
  2. Heat olive oil in a large skillet over medium-high heat and sear the Cajun-seasoned steak for 3-4 minutes per side until browned; remove and set aside.
  3. In the same skillet, lower heat to medium, melt 2 tbsp butter, and sauté garlic until fragrant.
  4. Stir in heavy cream and chicken broth, adding softened cream cheese until melted and combined.
  5. Gradually add grated Parmesan and shredded mozzarella, stirring until the sauce thickens; use reserved pasta water if needed.
  6. Incorporate cooked fettuccine and seared steak, tossing to coat everything in the sauce.
  7. Add remaining butter, stir to combine, and garnish with chopped parsley before serving.
