  • 6 units endives
  • 200 g Roquefort cheese
  • 1 sheet puff pastry
  • 30 g butter
  • 2 tablespoons sugar
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • to taste Salt
  • to taste Pepper

Method
 

  1. Slice the endives lengthwise and remove the bitter core.
  2. Heat olive oil in a skillet over medium heat.
  3. Place the endives cut-side down and let them sizzle until golden brown (about 5–7 minutes).
  4. Sprinkle sugar evenly across the pan and let it melt into a rich caramel coating.
  5. Drizzle balsamic vinegar to deglaze the pan, adding depth to the flavor.
  6. Season with salt and pepper, then set aside.
  7. Preheat your oven to 350°F (180°C).
  8. Butter a tart pan and arrange the caramelized endives cut-side up.
  9. Crumble chunks of Roquefort cheese generously over the top.
  10. Lay the puff pastry over the filling, tucking the edges neatly inside the pan.
  11. Make a few small slits on top to allow steam to escape.
  12. Chill the assembled tart in the fridge for 10 minutes before baking.
  13. Bake the tart for 25–30 minutes, or until the pastry is golden brown.
  14. For an extra glossy finish, brush the baked pastry lightly with melted butter once out of the oven.
