Ingredients
  

  • 6 whole endives
  • 200 g Roquefort cheese
  • 1 sheet puff pastry
  • 30 g butter
  • 2 tablespoons sugar
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • to taste salt and pepper

  • Tart pan or pie dish

Method
 

  1. Cut the endives in half lengthwise and remove the bitter core.
  2. Heat olive oil in a skillet over medium heat.
  3. Place the endives cut-side down and cook until they start to brown, about 5-7 minutes.
  4. Sprinkle sugar over the endives and let them caramelize for another 3-4 minutes.
  5. Add balsamic vinegar to deglaze the pan and let the liquid reduce slightly.
  6. Season with salt and pepper.
  7. Preheat your oven to 180°C (350°F).
  8. Grease your tart pan with butter and arrange the caramelized endives cut-side up.
  9. Crumble the Roquefort evenly over the top.
  10. Lay the puff pastry on top and tuck the edges inside the pan.
  11. Make small slits in the pastry to allow steam to escape.
  12. Bake the tart for 25-30 minutes, or until the pastry is golden brown.
  13. Let it rest for a few minutes before flipping it onto a serving plate.
