- Cut the endives in half lengthwise and remove the core.
- Heat olive oil in a skillet over medium heat and cook the endives cut-side down for 5-7 minutes.
- Sprinkle sugar over the endives and let them caramelize for another 3-4 minutes.
- Add balsamic vinegar to deglaze the pan and season with salt and pepper.
- Preheat the oven to 350°F (180°C) and butter a tart pan.
- Arrange the caramelized endives cut-side up in the tart pan.
- Crumble Roquefort cheese evenly over the endives.
- Unroll the puff pastry and drape it over the filling, tucking the edges inside the pan.
- Make a few small slits in the pastry to allow steam to escape.
- Bake for 25-30 minutes until the pastry is golden brown.
- Let the tart rest for a few minutes before flipping it onto a serving platter.
