Ingredients
  

  • 6 unit endives
  • 200 g Roquefort cheese
  • 1 sheet puff pastry
  • 30 g butter
  • 2 tablespoons sugar
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • to taste Salt and pepper

Method
 

  1. Cut the endives in half lengthwise and remove the core.
  2. Heat olive oil in a skillet over medium heat and cook the endives cut-side down for 5-7 minutes.
  3. Sprinkle sugar over the endives and let them caramelize for another 3-4 minutes.
  4. Add balsamic vinegar to deglaze the pan and season with salt and pepper.
  5. Preheat the oven to 350°F (180°C) and butter a tart pan.
  6. Arrange the caramelized endives cut-side up in the tart pan.
  7. Crumble Roquefort cheese evenly over the endives.
  8. Unroll the puff pastry and drape it over the filling, tucking the edges inside the pan.
  9. Make a few small slits in the pastry to allow steam to escape.
  10. Bake for 25-30 minutes until the pastry is golden brown.
  11. Let the tart rest for a few minutes before flipping it onto a serving platter.
