Ingredients
  

  • 2 cups masa harina
  • 1 tsp chicken bouillon optional
  • 1/2 tsp salt
  • 1 1/2 to 2 cups boiling water
  • 2 tbsp butter or lard softened
  • q.s. vegetable oil for cooking
  • 1 cup shredded mozzarella or Oaxaca cheese
  • 1 cup refried beans optional

Equipment

  • Large mixing bowl
  • Measuring cups and spoons
  • Spatula
  • Griddle or large skillet
  • Rolling pin (optional) for flattening the dough

Method
 

  1. In a large bowl, mix the masa harina, chicken bouillon (if using), and salt.
  2. Gradually add boiling water, stirring constantly until a smooth dough forms.
  3. Mix in the softened butter or lard until well incorporated.
  4. Let the dough rest for 10 minutes to cool and become pliable.
  5. Divide the dough into 12 equal portions and roll each into a ball.
  6. Flatten each ball into a disc about 1/4 inch thick.
  7. Place a small amount of cheese and beans in the center of each disc.
  8. Fold the edges over the filling and pinch to seal, then gently reshape into discs.
  9. Heat a griddle or large skillet over medium heat and lightly coat with vegetable oil.
  10. Cook the pupusas for 3-4 minutes on each side, or until golden brown and crispy.
