Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cups beef broth
  • 2 cups elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • to taste salt and pepper

Equipment

  • Large pot
  • Spatula
  • Measuring cups and spoons
  • Grater if using block cheese

Method

  1. In a large pot, brown the ground beef over medium heat until it's fully cooked and no longer pink. Add the diced onions and cook until they are soft and translucent, about 5-7 minutes.
  2. Pour in the beef broth and bring it to a boil. Stir in the elbow macaroni and let it cook for about 8-10 minutes, or until the pasta is tender.
  3. Lower the heat and stir in the shredded cheddar cheese and milk. Continue to cook, stirring occasionally, until the cheese melts and the soup thickens.
  4. Season the soup with salt and pepper to taste. Serve it warm, garnished with extra cheese if desired.
