- In a large pot, brown the ground beef over medium heat until it's fully cooked and no longer pink. Add the diced onions and cook until they are soft and translucent, about 5-7 minutes.
- Pour in the beef broth and bring it to a boil. Stir in the elbow macaroni and let it cook for about 8-10 minutes, or until the pasta is tender.
- Lower the heat and stir in the shredded cheddar cheese and milk. Continue to cook, stirring occasionally, until the cheese melts and the soup thickens.
- Season the soup with salt and pepper to taste. Serve it warm, garnished with extra cheese if desired.
