- Boil the potatoes in salted water for about 10 minutes and let them cool slightly before cutting into small cubes.
- Heat olive oil in a skillet over medium heat and cook the turkey bacon and sliced onions until golden and caramelized.
- Preheat your oven to 180°C (350°F). Roll out the puff pastry on a baking sheet lined with parchment paper and place the camembert in the center surrounded by the potato-bacon-onion mixture. Season with salt and pepper.
- Fold the puff pastry over the filling, sealing the edges firmly, and brush the top with the egg yolk.
- Bake for 25-30 minutes or until the pastry is puffed and golden brown. Let it rest for 5 minutes before slicing and garnish with fresh thyme if desired.
