Ingredients
  

  • 450 g ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (400 g) diced tomatoes
  • 1 can (400 g) red enchilada sauce
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup shredded cheese cheddar, Monterey Jack, or a blend
  • to taste salt and pepper

  • Large skillet with lid
  • Wooden spoon or spatula
  • Measuring spoons
  • Grater (if using block cheese)
  • Optional toppings fresh cilantro, sour cream, avocado slices

Method
 

  1. Heat a tablespoon of oil in a large skillet over medium heat and add diced onion; cook until translucent (3-4 minutes).
  2. Add minced garlic and sauté for another minute.
  3. Push the onions and garlic to the side of the skillet and add the ground beef; break into small chunks while it browns.
  4. Once browned, drain excess fat and add cumin and chili powder, mixing well.
  5. Pour in diced tomatoes and enchilada sauce; stir and let simmer for 5-7 minutes.
  6. Sprinkle shredded cheese over the skillet; cover and let the cheese melt.
