- Heat a tablespoon of oil in a large skillet over medium heat and add diced onion; cook until translucent (3-4 minutes).
- Add minced garlic and sauté for another minute.
- Push the onions and garlic to the side of the skillet and add the ground beef; break into small chunks while it browns.
- Once browned, drain excess fat and add cumin and chili powder, mixing well.
- Pour in diced tomatoes and enchilada sauce; stir and let simmer for 5-7 minutes.
- Sprinkle shredded cheese over the skillet; cover and let the cheese melt.
