Ingredients

  • 12 oz rotini pasta or your favorite short pasta
  • 1 lb steak (sirloin or ribeye), cut into bite-sized cubes
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 1 tsp chili powder
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper (optional, for extra heat)
  • 2 tbsp fresh parsley, chopped for garnish

Equipment

  • Large skillet
  • Pot for boiling pasta
  • Meat knife for cutting steak
  • Cutting board
  • Measuring spoons and cups
  • Wooden spoon or spatula
  • Colander for draining pasta

Method

  1. Cook the pasta in salted boiling water until al dente, about 8-10 minutes, then drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add steak cubes, season with Cajun seasoning and chili powder, and sear until browned, about 4-5 minutes. Remove steak and set aside.
  3. In the same skillet, sauté minced garlic for about 1 minute until fragrant. Pour in beef broth and heavy cream, stir in paprika, black pepper, and cayenne pepper (if using), and simmer until slightly thickened, about 5 minutes.
  4. Add shredded cheddar cheese to the skillet and stir until melted into a smooth sauce.
  5. Toss the cooked pasta into the skillet, coating it well with the sauce. Return seared steak to the skillet and mix gently.
  6. Garnish with fresh parsley and serve hot.

Notes

To enhance flavor, let the steak marinate in Cajun seasoning for 30 minutes before cooking. For quick prep, you can cook the pasta and sear the steak ahead of time and combine when ready to serve. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to 3 months. Reheat with a little milk to maintain creaminess.
